Colcannon

Colcannon is a classic Irish comfort dish made from creamy mashed potatoes blended with tender cabbage or kale. Enriched with butter and milk or cream, it’s often flavored with sautéed onions, leeks, or scallions for added depth. Hearty and rustic, colcannon is traditionally served as a side dish alongside ham or corned beef and remains a beloved favorite, especially in celebration of St. Patrick’s Day.
INGREDIENTS
16 oz kale
1 pound potatoes
2 leeks
1 cup milk
salt and pepper to taste
1 pinch ground nutmeg
1/2 cup butter
5 tlbs olive oil
DIRECTIONS

Preheat the oven to 400°F. Spread the kale on a sheet pan, drizzle with 3 tablespoons of olive oil, sprinkle with salt, and roast until crisp. Set aside.
Meanwhile, boil the potatoes in salted water until fork-tender. Drain well and return to the pot.
Thoroughly rinse the chopped leeks, using both the white and green parts. Sauté in 2 tablespoons of butter and 2 tablespoons of olive oil until soft and tender.
Mash the potatoes until smooth. Add the remaining butter, milk, a pinch of nutmeg, salt, and pepper to taste. Gently fold in the sautéed leeks and roasted kale. Serve warm.
