Storing Mushroom Harvest




To store, place mushrooms in a porous bag and refrigerate where air can flow freely around the mushrooms.





Only cultivated mushrooms should be eaten raw.

Clean, slice and place mushrooms in a ziplock bag to freeze if needed.


Storing and Handling Fresh Mushrooms

  • While the shelf life of fresh mushrooms varies, most will stay fresh for seven to ten days. They can be used in soups, salads, stir-fry and pasta, or sautéed, breaded or stuffed.

  • Wipe each mushroom clean and trim the stem bottom off. For tough stems like shiitake, you can trim the whole stem and use it as a flavor base for stock.

  • To clean wild mushrooms, thorough washing may be necessary to remove any earth and sand.

  • To store, place mushrooms in a porous bag and refrigerate where air can flow freely around the mushrooms.

  • You may choose to sauté or blanch the mushrooms before freezing, or just slice them, lay them on a cookie sheet not touching each other, freeze them, then store them in a bag. To prepare frozen mushrooms, do not thaw them. Heat some oil in a pan and cook them for 30 seconds. Remove from heat and let mushrooms finish cooking on their own.
