Guinness Chocolate Puddings

The story of Guinness chocolate pudding is inspired by the rich traditions of Irish cooking, where the bold, roasted notes of stout are often used to deepen and enhance sweet dishes. Although Guinness has been brewed in Dublin since 1759, pairing it with chocolate in a decadent pudding is a more contemporary creation—one that has become especially popular around St. Patrick’s Day celebrations.
INGREDIENTS
1 1/4 sticks Unsalted Butter
plus extra for the ramekins
1 1/4 cups Dark Chocolate
(70% cocoa), roughly chopped
1/2 cup Light Brown Sugar
3 Large Eggs
3oz Guinness
Whipped Whipping Cream or icecream to serve (optional)
DIRECTIONS
Step 1:Butter four 3.5-inch (9 cm) ramekins and set aside. In a heatproof bowl, combine 4 tablespoons of butter, 4 ounces (115 g) of chocolate, and a generous pinch of salt. Place the bowl over a small pan of simmering water and stir until melted. Remove from heat and let cool slightly.
Step 2:In a large mixing bowl, beat ½ cup (100 g) sugar and 3 large eggs with an electric mixer until pale, thick, and nearly doubled in volume, leaving a trail when the beaters are lifted. Gently fold in the melted chocolate mixture and ½ cup (120 ml) Guinness. Spoon the batter into the prepared ramekins, then chill in the refrigerator for 1 hour. Preheat the oven to 400°F (200°C; 180°C fan; Gas Mark 6) and place a baking sheet on the top rack to heat.
Step 3:Place the ramekins on the hot baking sheet and bake for 18 minutes. Remove from the oven and let stand for 1 minute. Serve warm, optionally topped with a dollop of cream.
